This ancient technique for preserving vegetables has some awesome health benefits - fermentation really is one of those miracles of nature that not only enabled humans to survive through the seasons where no food was able to grow but also enhanced the original food and elevated onto another nutritional level.
PaMa, our resident all-organic pickle and ferment masters are at the farmers' market every Saturday. They make delicious naturally fermented sauerkraut, kimchi, kombucha, gourmet pickles and jalapeno carrots.
All of PaMa's products are naturally fermented. No vinegar, water or heat is added, which means it's unpasteurized so it retains its vibrant ecosystem of beneficial probiotic bacteria. All their products are handmade with love in small batches, fermented in barrels and slowly dried.
You have to get in there early, though, as they tend to sell out!
The Farmers' Market runs from 10am-2.30pm every Saturday @ St. Paul's Church, N16 7UY
