Banana Cake

Very easy way of using up over ripe bananas. You can add spice, dried fruit such as raisins or sultanas, or some pieces of walnut if you like or just keep it simple.

Method 

Grease a large (99g/2lb) loaf tin or two small ones and heat the oven to 180C.

Cream the butter and sugar together, then add the eggs and mix in. Mix in the bananas.

Stir in the flour (and any spice or extras if using).

Pour into the tin and bake for 30 minutes.

Ingredients 

3 medium bananas, lightly mashed 

110g butter

225g sugar

2 eggs

225g self raising flour 

Optional: 1/2 tsp cinnamon and 1/2 tsp ginger, dried fruit
