Banana - or other fruit - buns

A great way of using up very ripe bananas. It also works with other fruit, such as strawberries, apricots or rhubarb. If using these, boil the fruit with sugar (to taste) until soft, then cool before adding to the cake mixture.

Method 

Preheat the oven to 180C.

Mix all the cake ingredients together, apart from the fruit, then add the bananas or swirl through.

Spoon into individual cake cases and bake for about 15 minutes.

Ingredients 

8 or more bananas mashed

4 eggs beaten

225g sunflower oil

300g caster or soft brown sugar

100g ground almonds (or replace with flour) 

325g self-raising flour

1 tsp vanilla essence
