This recipe won 3rd prize in Local Greens' Redeem the Swede competition. For more details look at the Local Greens website.
Saute the onions in oil until soft. Add the finely chopped garlic and ginger and saute for another 5 mins. Then throw in everything else and cook on medium heat for a few mins. Then keep adding water till the swede cooks.
To serve garnish with coriander.

2 yellow onions, chopped
5 cloves of garlic, crushed
1 piece ginger - 2cm, peeled and finely chopped
250g tin tomatoes
1 swede peeled and cubed
1/2 tsp turmeric
1/2 tsp red chilli powder
1 green chili seeded & chopped
2 red chilli seeded & chopped
1/2 tsp ground cumin
2 tbsp oil
Bunch of coriander, chopped
