Ginger maple swede

On a mission to make swede a bit more exciting I came up with this quick little recipe. It turned out to be a little sweet treat, tasting strangely like those little ginger chews you get in the Asian supermarkets. It’s not too sweet however, so suitable to serve as a side dish too.  

 

1 swede

1 tsp coconut oil

1 tbsp maple syrup

1 inch/ 5g ginger minced or grated

1 tbsp toasted sesame seeds

coriander for garnish

pinch salt

 

Pre heat oven 180C.

Peel the swede, cut into 1 inch pieces. Steam in a pan with a little water & the lid on for 15 minutes.

Drain and transfer to a lined baking tray, coat with your oil and maple syrup. Roast for 15 minutes, until the swede begins to take on colour. Add your ginger and mix through well. Roast for another 10 minutes until the swede is nice and golden. Remove from the oven, mix with your sesame seeds and a pinch of salt.

Garnish with coriander for a little colour.
