Kale with Peanut Butter, Walnuts and Dates

The sweetness of the dates and banana is really nice. Try serving with rice for a really easy, fast meal or just have as a snack with some toast. Great way to use up an old banana too.

Method 

Heat some olive oil, and saute the garlic and the onions. Add the peanut butter. Remove the stalks from the cavolo nero, slice and add to the pan. Add the sliced banana, walnuts and dates. Serve whilst still crunchy. Serve with some chilli sauce (or add chopped chilli / dried chilli flakes earlier when frying onions).

Ingredients 

300 grams of cavolo nero

3 teaspoons of peanut butter

A few chopped red onions (optional)

A small handful of sliced dates

1 garlic clove, roughly chopped

A small handful of walnuts

1 banana

Sweet chilli sauce (or chopped chilli if you don't have sauce)
