Marinated Red cabbage and walnut salad

1/2 red cabbage, finely shredded

3 tbsp balsamic vinegar

3 tbsp olive oil

50g walnuts, broken up and lightly toasted  

2 oranges, peeled with knife to remove pith, then chopped


Place the cabbage, vinegar and oil into a bowl. Mix well and leave to marinate for at least 30 minutes (which softens the cabbage).

Mix in the toasted walnuts and orange pieces just before serving.
