Oven Roasted Frittata

This hugely versatile recipe can be made with almost any veg and is a great way of using up any stray veg you have left from your bags. If you have some cooked veg left over from another meal, that can go in too.

Ingredients

600g of veg: onion, carrots, potatoes, squash, beetroot etc cut into cubes

1 large clove of garlic crushed

3 tbs olive oil

4 eggs

Chopped mixed fresh herbs

Chilli to taste 

Optional 20g hard cheese, grated

Salt and pepper

Method

Roast the veg and garlic in the oil at 190c/gas mark 5 til soft/slightly caramelised.

Beat eggs with herbs and seasoning (and chilli if you like).

Pour over the veg and sprinkle with cheese.

Bake for 10 -15 mins until set - or it can be browned under the grill.
