GC doesn't tend to borrow recipes from other sources - but since this cocktail has borrowed our very own pear grower's name, it seems only fair. It was originally contributed to Liquor.com by Erin Henning.
Ingredients
60ml gin
1 tbs lemon juice
60ml pear juice (fresh is best)
1 tbs simple syrup
2 dashes aromatic bitters
white from one medium egg
1 star anise
Method
Add all of the ingredients to shaker without ice and shake vigoriously for at least one minute, up to five minutes.
Add ice to shaker and continue to shake until chilled.
