Spicy roasted cauliflower

If you're making this for kids, probably best to ease off on the chillies.

Method 

Preheat the oven to 200C/gas 6.

Blanch the cauliflower in boiling water for a couple of minutes then drain and allow to steam dry. Toss it in the olive oil.

Crush or grind the spices and chilli with a pinch of salt, then mix them with the almonds, put them in an ovenproof pan and toast on the hob for a couple of minutes.

Then add the cauliflower. When it's starting to brown, add the lemon zest and juice and mix around well. Fry for about a minute longer then put the pan into the oven for about 15 minutes.

Ingredients 

1 cauliflower, broken into florets

2 tbs olive oil

Salt

2 tsp cumin seeds

2 tsp coriander seeds

1 dried red chilli

1 handful almonds, chopped or couple of heaped tablespoons of ground almonds

Zest and juice of a lemon
