Easy to make soup full of spinach's nutritional goodness including iron, calcium, vitamin C, folate and much more!
Bulk up the quantities if catering for more people.
1 medium-sized onion
1 large courgette
1 medium-sized potato
2 tbs olive oil
1.2 litre vegetable stock
Heat the oil in a large pan and saute the onion and courgette until the onion is transparent. Add potato, spinach and stock. Bring to the boil, reduce heat, cover and simmer for 20 minutes.
Whizz until smooth. Stir in cream if you are using it and adjust seasoning. Re-heat gently without boiling.
