A deliciously seasonal twist on a classic. Adding the wild garlic at the end allows it to retain its beautiful freshness.

500g potatoes
a handful of wild garlic
25g butter
50ml milk

Bring a pan of water to the boil.

Meanwhile, peel and chop the potatoes and finely shred the wild garlic.

Add the potatoes to the pan and boil until tender. Drain thoroughly and mash.

Heat the milk and butter together until the butter has melted. Add salt to taste.

Pour this over the mashed potato and mix.

Stir in the wild garlic and serve.
