Broad bean hummus

You can make hummus, or dips, from many of the vegetables in your bag. You might want to try using roasted beetroot or carrots or fried mushrooms. Also, try using different combinations of herbs and spices. This one is good with dill instead of the mint. And if you want a bit more of a kick, add a clove of crushed garlic to the mix.

Method 

Boiled the broad beans for a few minutes (remove the skins if they're a bit tough). Blend with olive oil, lemon juice, mint, salt and pepper to taste.

Ingredients 

Broad beans, podded

2 tbs olive oil

good squeeze of lemon juice

mint, a few leaves, chopped

salt and pepper to taste
