Charred Broad Bean, Pea, Mint & Feta Salad

This is a great use of super fresh broads as they are practically raw but with a smoky edge. This recipe uses feta cheese but it would also be good with goats cheese or ricotta too.

Method 

Get a frying pan on high heat. When it starts to smoke add the beans and peas, shake occasionally and get some charring. When done toss into a bowl with a squeeze of lemon and some olive oil. Get the remaining ingredients ready and toss in the bowl with the beans and peas, sprinkle with extra feta and mint and season.

Ingredients 

2 handfuls of very fresh broad beans

2 handfuls of frozen peas, defrosted under the hot tap and cooled.

lettuce, chopped

jarred marinated artichokes

radishes, sliced thinly

mint, chopped

lemon

olive oil

feta cheese
