Plum and spinach smoothie

This recipe comes from box scheme member Jodie Abrahams, who says smoothies are delicious, easy to digest and are a great way to pack more fruit and veg into your diet.

This vibrant green smoothie is rich in antioxidants, fibre and iron. The almond milk and almond butter add a nutty creaminess too. Plums and spinach are both high in anti-oxidants, which help protect our cells and tissues from free radical damage. Vitamin C helps us absorb iron, making plums and spinach an ideal combination.

Serves 2.

Easy to adapt. Try substituting other soft fruits.

Method

Wash plums and spinach.

Roughly chop banana and plums and add to blender with other ingredients.

Blend until smooth and enjoy straight away.
