This recipe couldn't be easier but it's all about the dressing! Perfect on a summer's day on its own or as an accompaniment to a bigger dish.
Bunch of fresh parsley (or other fresh herbs depending on what you have)
For the dressing:
1 tbsp cumin seeds
2 tpsp olive oil
2 tsp vinegar
Juice and zest of 1 lemon
Pepper and salt to season
Peel and grate the carrots and beetroot. Dry fry the cumin seeds for a few mins. Mix all the dressing in the jug and pour over the salad.
