Cheesy veg muffins

This simple recipe was recommended by a parent on the veg scheme as a delicious and effective way to encourage kids to eat more veg. (We'd normally recommend chopping the veg a bit smaller than in the picture!)

Ingredients

a couple of vegetables, eg carrot, broccoli, beetroot or a mixture, chopped up small 

1 cup milk

1 cup flour or chick pea flour

1 tsp baking powder

75g cheese, grated

Method

Preheat oven to 180C.

Mix all the ingredients together and spoon into muffin cases.

Bake for 25 mins or so.
