This is delicious stirred into plain yoghurt or drizzled over vanilla ice-cream.
Ingredients
300g damsons
120g sugar
Method
Put the damsons and sugar in a pan with enough water to cover. Heat gently until the sugar is dissolved, stirring occasionally. Turn up the heat and simmer until the fruit has separated from the stones and is completely soft.
Scoop out the stones. Pour the mixture into a sieve over a bowl and rub the puree through the sieve. Keep in a sealed jar in the fridge until ready to use.
