This delicious recipe is a creation by veg scheme member Pam and is made using the contents of the stir-fry pack from Ripple Farm. Serves 1 or 2.

Method 

Heat the oil in a large pan over a medium heat.

Add sliced vegetables /stir-fry pack and turn in the oil.

Add salt and pepper. Keep the vegetables moving in the pan.

Sprinkle on the ras el hanout and continue to stir fry for five or so minutes.

Serve as a side or with pasta.

Ripple stir-fry pack
Ingredients 

1 stir-fry pack, contents rinsed and sliced

1 tablespoon olive or rapeseed oil

1 level teaspoon Ras el hanout (a Moroccan spice mix usually featuring ginger, cardamom, cinnamon, allspice, coriander and others)

Salt

Freshly ground black pepper
