Radicchio, pear and nut salad

Radicchio is quite a bitter leaf, so works well with sweet or creamy partners, as in this simple salad.

Method 

In a large bowl, whisk together oil, vinegar and sugar then season with salt and pepper. Add radicchio, pear and nuts (and onion, if using) and toss to combine. Scatter cheese (if using) over the top before serving.

Radicchio, pear and hazelnut salad
Ingredients 

4 tbs extra-virgin olive oil

2 tbs red-wine vinegar

1 1/2 tsp sugar

Salt and ground pepper

1 head radicchio, shredded

1 pear, finely sliced

50g hazelnuts, almonds or walnuts, toasted and coarsely chopped

Optional: chopped spring onions

Optional: 70g sharp, salty cheese, such as goat's cheese or pecorino, chopped, crumbled or shaved
