Roasted kohlrabi with Parmesan

Kohlrabi has a fantastic crunchy texture so it's delicious raw - simply peel then grate or shave into a salad. But it also works well steamed, roasted or in a gratin. This recipe is very easy and totally delicious.

Method 

Preheat an oven to 230C. Cut the kohlrabi into 1cm thick slices, then cut each of the slices in half. Combine the olive oil, garlic, salt and pepper in a large bowl. Toss kohlrabi slices in the mixture to coat. Spread in a single layer on a baking sheet. Bake for 15 to 20 minutes, stirring occasionally in order to brown evenly. Remove from oven, sprinkle with Parmesan cheese, then return to the oven for about 5 minutes. Serve immediately.

Ingredients 

2 kohlrabi bulbs, peeled

1 tablespoon olive oil

1 clove garlic, crushed 

Salt and pepper to taste

50g grated Parmesan cheese - or vegetarian alternative
