1 large head of radicchio, cut into quarters so leaves are still attached to stalk
2 tablespoons olive oil
1 tablespoon chopped fresh thyme
Sea salt and pepper
Balsamic vinegar
Method
Preheat oven to 200C. Wash the radicchio and place the wedges in a large bowl. Drizzle with olive oil, sprinkle with thyme, salt and pepper and toss to coat. Arrange radicchio pieces on baking sheet and roast for about 10 minutes until wilted. Turn over and roast the other side for a few minutes. Remove from oven and drizzle with balsamic vinegar before serving.
