Spicy carrot dip

This tasty dip will keep in the fridge for a few days after you've made it.


500g carrots

3 tbs olive oil

2 tbs vinegar

2 cloves garlic

1 tsp smoked paprika

1 tsp ground cumin



Chop the carrots into thick slices and boil until soft.

Place all the ingredients in a blender and whizz into a smooth paste. (Or finely chop the garlic and mash into the other ingredients with a fork.)
